Let’s go back to Dr. Bircher Benner. The muesli that we like to enjoy for breakfast today was invented by the Swiss doctor Dr Bircher-Benner. It all began in Switzerland when the doctor and nutritional reformer Maximilian Oskar Bircher-Benner was entertained by a dairymaid on an alpine pasture.
According to stories, he discovered his apple diet on a mountain hike in the Alps, when a dairymaid fed him a raw food meal. Alpine herdsmen had been eating this puree, which consisted of oat flakes, apples, nuts, lemon juice and sweetened condensed milk, for more than a hundred years.
From 1902 onwards, Dr Bircher-Benner tried to introduce the guests in his Zurich sanatorium to a wholefood diet with fresh fruit in this way – and he certainly succeeded. At that time, Birchermus was still served as an easily digestible evening meal.
Bircher-Benner is considered a pioneer of wholefood nutrition. Originally, he was convinced that unprocessed raw vegetable food, as used for muesli, contained “biologically effective light quanta” from which the body could gain “life force”, which later turned out to be wrong.
As a representative of vegetarian raw food nutrition, the most important thing for Bircher-Benner was the freshly grated apples with skin and core, not cereal flakes.

Breakfast porridges made from finely ground cereals in particular are making a comeback. They can be eaten immediately, hot or cold, and cumbersome and lengthy overnight soaking of the grains is now a thing of the past.
