Damascus steel (also called welded composite steel) is a workpiece that is composed of different layers of steel and is fire-welded.

  1. Heating: The different types of steel are first heated to over 1,200 degrees Celsius.
  2. Folding and forging: After the steel has been heated, it is folded and forged. The number of layers doubles per folding process.
  3. Repetition: The process is then repeated until the necessary number of layers is reached to form a stable and solid blade.
  4. Acid bath and polishing: The blades are then treated in an acid bath for further hardening and polished afterwards, which results in the unique patterning of the blades.

Damascus knives should be made of at least 30 layers. Traditional handmade blades usually consist of more than 300 layers of steel.

What is the difference between a Damascus knife and a ceramic knife?

In addition to the Damascus knife, the ceramic knife is also very popular in German kitchens. Ceramic knives impress with their extreme sharpness, which is retained even longer than with steel blades.

However, the ceramic knife also has major disadvantages compared to the Damascus knife. Not everything can be cut with ceramic knives and they can break more easily. Not only should you be careful with frozen things, but if it falls on the floor, it breaks easily.

What are the alternatives to a Damascus knife?

Besides the ceramic knife just mentioned, Bowie knives made of stainless steel and carbon steel are also a sensible alternative to the Damascus knife.

Stainless steel is normally extremely resistant to rust. Especially the so-called universal steel (=440 steel) is used for the production of Bowie knife blades. A distinction can be made between the steel types 440A, 440B and 440C. If the manufacturer only specifies 440 steel, it is very likely that 440A or 440B steel was used. Because 440C would definitely be a selling point. 440C stainless steel is the highest quality stainless steel for knives. It looks good, is very robust and has a long life expectancy.

Carbon steel is not as resistant to rust as stainless steel, but it is more robust and resistant to cutting. In addition, carbon steel can be lubricated thinner and sharpened well. It should be noted, however, that acidic foods can cause the steel to tarnish.

What does the law say about Damascus knives?

In Germany it is generally forbidden to carry knives with a blade that can be fixed with one hand (also called one-handed knives) or fixed knives with a blade length of more than 12 cm (§ 42a Weapons Act (WaffG)). This prohibition does not apply if the knife is carried in connection with the execution of a profession.

Normally, Damascus knives have a blade length of more than 12 cm and are therefore prohibited to carry in Germany.

As a rule, you may only use a Damascus knife within your own four walls or on private property. However, purchase and possession are legal and possible without age restrictions, although many online shops play it safe and require proof of age for Damascus knives.

In the following exceptional cases, you may legally carry a Damascus knife:

  1. Hard stone: Draw one side of the knife over the hard stone at a fixed angle until a burr forms on the top.
